SOUTHWESTERN CHICKEN & RICE SOUP
Serves 6

INGREDIENTS:

3 14.5 oz. cans reduced sodium chicken broth
3 tablespoons Two Snooty Chefs Southwest Sedona seasoning
1 cup finely sliced sweet onion (such as Vidalia)
1 1/2 cups cooked white rice
1 cup shredded cooked skinless boneless chicken breast
1 cup corn

GARNISH: 

1 avocado, peeled, pitted and cut into 12 thin slices
2 tablespoons fresh chopped cilantro
1 lime, cut into 6 wedges

DIRECTIONS:

Bring broth to boil, stir in Two Snooty Chefs Southwest Sedona Gourmet Spice Blend and onion and simmer 15 minutes. 

Add rice, chicken and corn and simmer another 10 minutes.

Ladle soup into 6 bowls, garnishing each with 2 avocado strips and 1 teaspoon fresh cilantro.  Place a lime wedge on the rim of each bowl to squeeze over soup before enjoying.
