Serves 6
INGREDIENTS:
1-1/2 cups couscous
1/3 cup mild olive oil
3 tablespoons fresh lime juice
1 teaspoon pure maple syrup
1 tablespoon Two Snooty Chefs Southwest Sedona seasoning
1 cup 1/2-inch cubed smoked deli style turkey breast
1 cup canned rinse and drained black beans
1/3 cup chopped green onions
1/2 cup 1-inch matchstick cut peeled jicama
1/2 cup 1/2-inch cubed peeled avocado
PROCEDURE:
Bring 1-1/2 cups water to a boil in a medium saucepan, remove from heat then place lid on top and let stand until all liquid is absorbed in about 5 minutes. Fluff with 1 teaspoon of the oil then let stand uncovered to cool. Meanwhile in a large bowl whisk together the oil, lime juice, maple syrup and the Southwest Sedona Spice. When couscous has cooled, add to the bowl along with turkey, black beans, green onion, jicama and avocado. Lightly toss to coat. Serve at room temperature or slightly chilled.
TIPS:
Have the deli slice real (not pressed) smoked turkey into 1/2 inch thick slices then take home and chop into 1/2 inch cubes for this salad.
If available purchase mesquite smoked turkey for added Southwestern flavor.
