Grilled Tomato Bread

Yield: 10-12 servings

Ingredients:

  • 1 baugette, split length-wise
  • 1 garlic clove
  • 2 large, ripe beef steak tomatoes
  • Two Snooty Chefs Sel Gris De Guerande Sea Salt to taste

Procedure:

  1. Lay the split baguette on a cutting board, rub the cut surfaces of the baguette with the garlic clove, set aside
  2. Cut the tomatoes in half horizontally, squeeze the seeds out of the tomatoes
  3. With a box grater, grate the tomatoes on the big holes of the box, all that should remain is the skin
  4. Place the tomato puree in a bowl
  5. Place the garlic seasoned baguette halves cut side down on a hot barbeque grill; grill bread 1 ½ – 2 minutes, turning as needed, place on cutting board
  6. Spoon tomato puree on grilled bread and sprinkle with Two Snooty Chefs Sel Gris De Guerande Sea Salt to taste
  7. Cut baguette into serving size pieces and serve – Note: bread can be drizzled with EVOO before serving
