Makes 16
INGREDIENTS:
1/2 cup rough chopped smoked salmon
1 green onion, trimmed and cut into 6 pieces
2 teaspoons drained capers
4 ounces cream cheese, room temperature
2 tablespoons sour cream
1 teaspoon fresh lime juice
1 tablespoon Two Snooty Chefs Salmon Chemisé
1 English cucumber
PROCEDURE:
Place smoked salmon, green onion, capers, cream cheese, sour cream, lime juice and Salmon Chemise in a food processor. Blend until smooth using the on/off button, scrap down sides with a rubber spatula if needed. Trim both ends off cucumber then cut in half crosswise. Cut each half lengthwise into 8 slices. Place slices on work surface then spread with smoked salmon mixture. Starting at one end roll up and secure with toothpicks. Serve at room temperature of slightly chilled.
